


At Artful Chiropractic, our approach to nutrition is about giving the
body the nourishment it needs to bring it back into balance. The
self-regulatory mechanisms of the body can heal and correct problems
with much finer tolerances than any physician. A good example of this is
Type II Diabetes.
Diabetes is a disorder in which the body has difficulty taking the
sugar out of the bloodstream. In Type II diabetes, blood sugar has risen
so frequently that the cells are no longer responding well to the insulin
used to take the sugar out of the blood. The standard treatment is to
administer increasing doses of prescription insulin because high levels
of blood sugar are very dangerous to a variety of tissues. The problem
however, is that increasing the doses of insulin simply further decreases
the body's response to insulin. A more effective response is to seek
ways to make the body more sensitive to its own insulin.
The term "whole food" nutrition refers to the form in which nutrients
are provided. Many chronic diseases, such as scurvy, have been to a
large extent eradicated by the "enrichment" of foods such as refined
flour. However, what that really means is that all the micronutrients
(vitamins and minerals) have been stripped out of the food by
processing, and only a few have been added back. The problem with
this is that the micronutrients that are "enriched" in foods only represent
a small fraction of those discovered, and the steady increase in these
discoveries suggest there are many more we know nothing about.
Additionally, we have evolved eating all our nutrients together (with what
are known as "co-factors"), and therefore we use them together. Trying
to use "enriched" forms means our bodies must come up with the
co-factors, and our stores of them are depleted.
In contrast, we feel it is better to get our micronutrients in the way
nature intended, in "unrefined" form, with all the co-factors we need to
use them. In practice this means a couple of things. First, eating good
quality, organic, non-genetically modified, unrefined foods is the most
important factor. One cannot really make up the nutrients by
supplements alone. Second, any supplements used should be in whole
food form as much as possible. This means they are made from foods
high in the desired nutrient, and processed minimally, usually under low
heat, and just to remove water. While the "concentration" of the desired
nutrient is low, remember than we didn't evolve eating 1500% RDA of
Vitamin C; we got Vitamin C in whole food form from citrus.
